Who are your favorite literary couples? You know — the ones you like by themselves, but LOVE together!
Ron and Hermione are the obvious Weasley choice, but I'm going with a couple of Weasley couples who get far less credit for their loving, functional relationships:

Mrs. Weasley: Oh, honestly...
Mr. Weasley: Molly!
Mrs. Weasley: All right, all right... What is your dearest ambition?
Mr. Weasley: To find out how aeroplanes stay up.
[Mrs. Weasley goes to open the door]
Mr. Weasley: Molly! I've got to ask you your question first!
Mrs. Weasley: Arthur, really, this is just silly...
Mr. Weasley: What do you like me to call you when we're alone together?
Mrs. Weasley: [whisper] Mollywobbles.

Mrs. Weasley: Of course, it doesn't matter how he looks...It's not r-really important... but he was a very handsome little b-boy... always very handsome... and he was g-going to be married!
Fleur: And what do you mean by zat? What do you mean, 'e was going to be married?
Mrs. Weasley: Well — only that —
Fleur: You theenk Bill vill not wish to marry me anymore? You theenk, because of zees bites, he vill not love me?
Mrs. Weasley: No, that's not what I —
Fleur: Because 'e vill! It would take more zan a werewolf to stop Bill loving me!
*Having not read the book, but thoroughly loved the movie, I base this pick on the assumption that the love between Edward and Elinor is as mature and level-headed in the book as in the 1995 film.
Edward: Your friendship has been the most important of my life.
Elinor: You will always have it.
Scarlett: Sir, you... you should have made your presence known.
Rhett: In the middle of that beautiful love scene? That wouldn't be very tactful, would it? But don't worry, your secret is safe with me.
Scarlett: Sir, you are no gentleman.
Rhett: And you, miss, are no lady... Don't think that I hold that against you. Ladies have never held any charm for me.
Honorable Mention: Jacob Black and Bella Swan, TWILIGHT
Sure, they didn't end up together, but I think Jake and Bella made the better couple. And not because I didn't like the Cullens. I thought Edward was a thoughtful character (anyone who's read what exists of MIDNIGHT SUN can atest to that), but not right for Bella. We are told throughout the series that Bella is more mature than her peers, but really, what would a vampire with 90-something years life experience, multiple degrees, and the ability to have anyone see in her? Besides the fact he couldn't read her thoughts, I'm coming up empty. And despite any and all reasoning, I like Bella and Jacob better together.

AWWWW, Molly and Arthur! That's my favorite answer so far, for sure.
I did like Bella better with Jacob, but then again I did like Jacob better period.

I have a million faves, but will answer for HP to stay on topic. Not a romantic couple, but my favorite pair in HP is of course Fred & George. Sibling love FTW.

I love the Arther and Molly choice. They're love is so real, but it just lives piecefully in the background. Great pick!
I'm a fan of Gilbert and Anne in the Green Gables books. Also pretty much any of the Jane Austen couples. Emma and Knightly, Elizabeth and Darcy, Jane and Bingly, Anne and Captain Wentworth. I love them all.

Aw, I love Sense and Sensibility. In the movie version when Elinor breaks down crying it gets me every time.
Okay, the Mollywobbles line from HP gets me EVERY. TIME. I am so glad you brought them up, they are simply the best!!
And honestly? That excerpt from GWTW makes me want to read the book more than almost anything else I have read about it! I cannot resist sassy love. LOL
My favorite literary couple has got to be Katniss and Peeta. And I was Team Gale right up until the end, but somehow when Katniss finally did end up with Peeta, it just seemed perfect. I just LOVE The Hunger Games!
